Many stores in Myeong-dong and Insa-dong open after 10 AM. I think you will have better luck at traditional outdoor market at Namdaemoon market to see open stores. You can find many pastry shops, snack cart selling coffee and toasts, and convenient stores open on early hours.

No problem getting into downtown Seoul by 6+ if your plane touches down on schedule at 4am. Immigration clearance at Incheon is very brisk. Department stores such as Lotte, Hyundae, Shinshigae - along with their supermarkets - are closed Mondays. However, many shops in Myeongdong and nearby Namdaemun remain open Mondays in a bid to drum up business in the lacklustre market now. Insadong is quite quiet on weekdays so you can skip it this stopover if you have limited time. MacDonald%26#39;s in Myeongdong opens at 7am. Family-run food shops serving rice with local dishes also open early - Koreans have hearty breakfasts! Alternatively, get hot dogs, noodles in a cup and the other grab-and-go stuff at 24/7 convenience stores which are easily found on most streets. Cheers.
